This legendary Buffalo Chicken Dip is a crowd-pleasing, hearty, and comforting appetizer, perfect for game day, parties, or a cozy movie night. It's easy to make in minutes, yet tastes like it took hours, featuring tender chicken, melted cheese, and a zesty sauce that balances spicy and creamy flavors. It's versatile, great for using leftover rotisserie chicken, and cleans up easily.

Ingredients

Scale

2 Cups Cooked Chicke
8 oz Cream Cheese
1/2 Cup Buffalo Sauce
1/2 Cup Ranch Dressing
1 1/2 Cups Cheddar Cheese
1/2 Cup Monterey Jack Cheese
2-3 stalks Green Onions
1/2 tsp Garlic Powder

Instructions

  1. Preheat your oven to 350°F (175°C). While the oven warms up, prepare your baking dish by lightly greasing it with cooking spray
  2. Place your softened cream cheese in a medium-sized mixing bowl. Use a spatula or hand mixer to beat it until it is completely smooth, preventing any lumps
  3. Stir in the buffalo sauce and the ranch dressing. Continue mixing until the color is uniform and the texture is velvety
  4. Mix in the garlic powder and any other desired seasonings. Taste the base and adjust the heat if necessary
  5. Add the shredded chicken and one cup of the shredded cheddar cheese. Fold them gently into the creamy mixture until everything is well-coated
  6. Spread the mixture evenly into your prepared baking dish. Use the back of a spoon to smooth the top
  7. Sprinkle the remaining cheddar and Monterey Jack cheese over the top to create a bubbly crust
  8. Place the dish in the oven and bake for 20 to 25 minutes, until the edges are bubbling and the cheese on top is perfectly melted and slightly golde
  9. Remove the Buffalo Chicken Dip from the oven. Let it sit for five minutes to set slightly. Finally, garnish with fresh green onions and serve warm

Notes

Always shred your own cheese from a block for a gooey, stretchy consistency.

Ensure cream cheese is truly at room temperature to avoid white flecks.

If using rotisserie chicken, include both white and dark meat for best flavor and moisture.

To prevent an oily dip, blot the top gently with a paper towel before serving if needed.

Do not overbake, as this can cause dairy components to separate and become greasy.

Store leftovers in an airtight container in the refrigerator for up to three to four days. Do not freeze.

To reheat, microwave small portions in 30-second intervals or bake larger portions in an oven-safe dish at 325°F until heated through. If thick, stir in a splash of milk or extra ranch dressing.
