Instructions

  1. Place the two cups of cottage cheese into your blender carafe
  2. Add your liquid sweetener (honey or maple syrup), vanilla extract, and lemon zest
  3. Start the blender on a low speed to break up the large curds
  4. Gradually increase the speed to high. You will see the texture change from chunky to smooth within about sixty seconds
  5. Stop the blender and scrape down the sides
