These Apple Cinnamon Oat Bites are a wholesome, halal-friendly, and no-bake snack that satisfies your family's sweet tooth without the sugar crash. Perfectly spiced with cinnamon and packed with fiber, they are great for school lunches, busy mornings, or post-workout energy.

2 Cups Old Fashioned Rolled Oats
1 Cup Fresh Red Apple (finely grated)
1/2 Cup Halal Almond Butter
1/3 Cup Pure Honey or Maple Syrup
1 Tablespoon Ground Cinnamo
1 Teaspoon Halal Vanilla Powder
1 Tablespoon Chia Seeds
1/4 Teaspoon Salt

Instructions

  1. Gather all ingredients on the counter
  2. Grate the fresh red apple using a fine grater. Squeeze any excess moisture from the grated apple to prevent the bites from becoming too soft
  3. In a large mixing bowl, combine the rolled oats, ground cinnamon, chia seeds, and salt. Stir the dry ingredients well to ensure the flavors are evenly distributed
  4. Add the almond butter, honey (or maple syrup), and halal vanilla powder to the dry mixture. Use a sturdy spatula to fold everything together until a thick dough forms
  5. Fold in the grated apples until the mixture is consistent
  6. Place the bowl in the refrigerator to chill for 30 minutes, which makes rolling the bites much easier
  7. After chilling, use a small cookie scoop to portion out the mixture. Slightly dampen your hands and roll the portions between your palms to form smooth, round bites
  8. Place the finished bites on a parchment-lined tray and serve, or store them for later

Notes

To make this recipe vegan, swap the honey for pure maple syrup.

If the mixture is too dry, add a teaspoon of water or honey; if it's too wet, sprinkle in more oats.

Store in an airtight container in the refrigerator for up to one week, or freeze in a single layer for up to three months.

Optional: Bake at 350°F for 10-12 minutes for a warm, cookie-like texture.
