Instructions

  1. Cook the chicken (boil, bake, or pan-sear to 165°F), then shred with two forks
  2. Toss the warm chicken in buffalo sauce; warm meat grabs the sauce better than cold
  3. Chop all the vegetables while the chicken cools slightly
  4. Build the bowl by arranging greens and vegetables in sections, with buffalo chicken in the center
  5. Drizzle dressing and add blue cheese only on the portion you're eating now

Notes

For meal prep, store components separately and sauce chicken per-portion to prevent greens from wilting. Sauced chicken sitting on greens for 3 days turns everything limp.

Cool cooked chicken before it hits the greens; hot chicken wilts lettuce instantly.
