Ingredients

Scale

1.5 lbs Halal Boneless, Skinless Chicken Breasts
2 tbsp Olive Oil
4 cloves Garlic
1/2 cup Sun-Dried Tomatoes
5 oz Fresh Spinach
1/2 cup Halal Chicken Broth
1 cup Crème Fraîche
1/2 cup Grated Parmesan Cheese
1 tsp Italian Seasoning
1/2 tsp Red Pepper Flakes
To taste Salt and Black Pepper
12 oz Your Favorite Pasta
Chopped Fresh Parsley

Instructions

  1. Cook the Pasta: First, bring a large pot of salted water to a rolling boil. Add your chosen pasta and cook according to package directions until al dente. Reserve about 1 cup of the pasta cooking water before draining
  2. Sear the Chicken: Meanwhile, heat the olive oil in a large skillet or Dutch oven over medium-high heat. Season the halal chicken pieces generously with salt, pepper, and Italian seasoning. Add the chicken to the hot skillet and cook for 5-7 minutes, turning occasionally, until golden brown and cooked through. Remove the chicken from the skillet and set aside
  3. Sauté Aromatics: Reduce the heat to medium. Add the minced garlic and chopped sun-dried tomatoes to the skillet, stirring for about 1 minute until fragrant
  4. Build the Sauce: Pour in the halal chicken broth, scraping up any browned bits from the bottom of the pan – this adds incredible flavor to your Creamy Tuscan Chicken Pasta. Bring to a gentle simmer
  5. Add Creaminess: Stir in the crème fraîche (or yogurt) and grated halal Parmesan cheese. Mix well until the cheese melts and the sauce becomes smooth and creamy. Season with red pepper flakes (if using), salt, and pepper to taste
  6. Wilt the Spinach: Add the fresh spinach to the sauce, stirring until it wilts completely, which takes just a couple of minutes. The vibrant green adds a beautiful contrast to the rich Creamy Tuscan Chicken Pasta
  7. Combine and Serve: Return the cooked chicken to the skillet with the sauce. Add the drained pasta and toss everything together to coat thoroughly. If the sauce seems too thick, add a splash of the reserved pasta water until it reaches your desired consistency. Garnish your Creamy Tuscan Chicken Pasta with fresh chopped parsley and extra halal Parmesan cheese. Serve immediately and enjoy!

Notes

Don't Overcook the Pasta: Al dente pasta holds its shape and texture best, especially when tossed in a rich sauce. Overcooked pasta can become mushy.

Sear the Chicken Well: Achieving a nice golden crust on your halal chicken pieces adds a layer of depth and flavor. Don't crowd the pan; cook in batches if necessary.

Reserved Pasta Water is Gold: That starchy water helps emulsify the sauce, making it cling beautifully to the pasta. Always reserve some before draining.

Fresh Spinach is Key: While frozen spinach can work, fresh spinach gives a vibrant color and better texture, wilting down quickly.

Taste and Adjust: Always taste your sauce before combining it with the pasta. Adjust salt, pepper, and any other seasonings as needed.

Halal Cheese Check: Ensure your Parmesan cheese is indeed halal certified. Many hard cheeses use animal rennet, so always double-check the label.

Storage: Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days.

Reheating: Gently reheat on the stovetop over low to medium heat. Add a splash of halal chicken broth or milk to thin the sauce and restore consistency. Stir frequently until heated through. Microwaving individual portions is also an option.

Prep Ahead: Cook the chicken and chop the sun-dried tomatoes in advance. You can even make the sauce base (without spinach and chicken) a day ahead. When ready to serve, reheat the sauce, add spinach and chicken, and then toss with freshly cooked pasta for best results.
