This cottage cheese breakfast bowl offers two variations (sweet and savory) designed to make cottage cheese appealing, providing a high-protein, quick, and no-cook meal ideal for fitness goals and busy mornings. It's built around solving texture issues, offering options where the curds disappear or become an asset.

Ingredients

Scale

Pinch Cinnamo
1 cup low-fat cottage cheese (225g)
1/2 cup mixed berries
1 tablespoon honey or maple syrup
2 tablespoons granola (15g)
1 tablespoon chia seeds
1/2 teaspoon vanilla extract
1 soft-boiled egg
1/2 avocado
1/2 cup cherry tomatoes
Everything bagel seasoning
Drizzle olive oil
Black pepper
Flaky salt
Cucumber slices (optional)
Kalamata olives (optional)

Instructions

  1. **Preparation (for both builds):** Drain the cottage cheese briefly using a fine-mesh sieve or by tilting the measured cup over the sink to remove excess whey liquid. This single move fixes half of the texture complaints
  2. **Sweet Build (3 minutes):** Stir 1/2 teaspoon vanilla extract and a pinch of cinnamon into the drained cottage cheese until well combined. Top with 1/2 cup mixed berries, drizzle with 1 tablespoon honey or maple syrup, and finish with 2 tablespoons granola and 1 tablespoon chia seeds. Optionally, add a tiny pinch of freshly ground black pepper over the honey-and-berry topping to amplify fruit and cut dairy richness
  3. **Savory Build (8 minutes):** While a soft-boiled egg cooks for 7 minutes (for a jammy yolk), spread the drained cottage cheese as a base. Arrange 1/2 sliced avocado, 1/2 cup halved cherry tomatoes, and the halved soft-boiled egg on top. Drizzle with olive oil, hit it with Everything bagel seasoning, black pepper, and flaky salt. Optional additions include cucumber slices and a few kalamata olives
  4. **Blended Option (for Sweet Build):** If curds are a hard no, blend the cottage cheese for 20 seconds before adding vanilla and cinnamon, then proceed with the sweet toppings for a completely smooth base

Notes

**Cottage Cheese Choice:** Small-curd, 2% fat is the sweet spot for bowls. Large curd is wetter and chunkier (fine for savory, rough for sweet), and nonfat can be watery and weirdly sour. Brand matters, so taste two or three before judging the category.

**Handling Builds Differently:** For sweet, stir in vanilla and cinnamon first to reframe curds as cheesecake-like. For savory, don't stir anything in; leave cottage cheese as a bed and layer toppings on top for a Mediterranean café plate look.

**Meal Prep & Storage:** The bowl is very fast to assemble. For the sweet build, portion cottage cheese + vanilla + cinnamon into containers (max 3 days). Toppings stay separate; granola dies instantly in dairy. For savory, boil 5 eggs on Sunday (they keep 5 days peeled in fridge in a container with a damp paper towel). Everything else assembles in 2 minutes. Do not freeze cottage cheese; it separates into a grainy, broken texture.

**Timing for Training:** Ideal after training due to casein's slow-release protein and the sweet build's berries and honey restocking glycogen. Before a morning session, take the sweet build at half portion.

**Lactose Intolerance:** Cottage cheese is naturally lower in lactose. Lactaid offers a lactose-free cottage cheese that works identically here.

**Opened Tub Shelf Life:** 5–7 days refrigerated, stored upside down (creates a light seal). Discard if it smells sharp or liquid turns yellowish.
