1 tbsp Fresh dill (chopped)

1 tsp Lemon juice

2 cups Cooked quinoa or brown rice
1 cup Cherry tomatoes (halved)
1 cup Cucumber (diced)
0.5 cup Red onion (thinly sliced)
0.5 cup Kalamata olives (pitted, halved)
0.5 cup Feta cheese (crumbled, halal certified)
2 tbsp Fresh parsley (chopped, for garnish)

Instructions

  1. Marinate the Halal Chicken: In a bowl, combine the diced halal chicken with olive oil, lemon juice, dried oregano, garlic powder, salt, and pepper. Mix well to ensure the chicken is evenly coated. For best flavor, let it marinate in the refrigerator for at least 30 minutes, or up to 4 hours
  2. Prepare the Tzatziki Sauce: While the chicken marinates, prepare your sauce. Grate the cucumber and squeeze out as much excess water as possible using a paper towel or cheesecloth. In a medium bowl, combine the halal certified Greek yogurt, squeezed cucumber, fresh dill, minced garlic, lemon juice, salt, and pepper. Stir until well combined.
