A healthy, quick, and halal-friendly One Pan Lemon Herb Salmon baked with fresh asparagus, olive oil, and aromatic herbs. Perfect for a busy weeknight family dinner.

4 fillets Halal Certified Salmon Fillets
1 bunch Fresh Asparagus
3 tablespoons Extra Virgin Olive Oil
2 tablespoons Fresh Lemon Juice
3 cloves Garlic
2 tablespoons Fresh Parsley
2 tablespoons Fresh Dill
1 pinch Sea Salt & Black Pepper
1 whole Lemo

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for the easiest cleanup
  2. Place the trimmed asparagus on one side of the pan. Drizzle with one tablespoon of olive oil and a pinch of salt. Toss them directly on the pan to coat evenly
  3. In a small bowl, whisk together the remaining olive oil, lemon juice, minced garlic, parsley, and dill
  4. Lay the salmon fillets on the other side of the baking sheet. Rub the herb mixture generously over each piece of fish. Season with salt and pepper
  5. Top each fillet with a fresh lemon slice for extra flavor and presentatio
  6. Bake for 12 to 15 minutes, depending on the thickness of your fillets. The salmon is done when the fish flakes easily with a fork

Notes

Bring your salmon to room temperature for about 10 minutes before cooking to help it cook more evenly.

Do not overcook the fish! Use a meat thermometer to check for an internal temperature of 145°F.

Make sure you spread the vegetables out in a single layer so they roast instead of steam.

Always use fresh lemon juice rather than the bottled variety for the brightest flavor profile.

Store leftovers in an airtight container in the refrigerator for up to two days and reheat gently in the oven at 275°F.
