Instructions

  1. Mix chili powder, cumin, smoked paprika, garlic powder, and salt in a small bowl. Rub all over the chicken and let it sit 10 minutes while you prep the vegetables
  2. Heat olive oil in a skillet over medium-high. Cook the chicken 5–6 minutes per side until the internal temperature hits 165°F (74°C). Don't move it around — that crust is where the flavor lives. Rest 5 minutes, then slice against the grai
  3. After removing the chicken, throw the thawed corn kernels dry into the empty skillet (do not wash the pan) and let them sit untouched for 2–3 minutes until some kernels get dark spots, charring them for enhanced flavor
  4. Whisk Greek yogurt, lime juice, chipotle powder, honey, and salt. Add water one tablespoon at a time until it drizzles off a spoon. Taste it — if it's flat, it needs more lime or salt, not more chipotle
  5. Layer romaine, black beans, charred corn, tomatoes, red onion, and avocado. Top with sliced chicken, cheese if using, and cilantro. Drizzle the dressing right before eating

Notes

The spice rub needs at least 10 minutes on the meat for proper seasoning.

For meal prep, store the dressing in a separate container to keep the salad crisp; do not dress the whole batch on Sunday.

Avoid pre-made 'taco seasoning' packets due to unverified ingredients, high sodium, and added sugar; mix your own spices for control.
